I experienced a weather anomaly when flying FS2020 in winter conditions. It goes like this: I take off from an airport with a surface temperature below freezing, There are scattered or broken clouds about two thousand feet above the surface. Above and below the clouds is clear air. As I ascend to my cruising altitude, I note that the temperature remains the same below freezing all the way up. As I enter the clouds while climbing, the aircraft picks up rime icing. So, what happens next is that the icing gets so thick on the aircraft that it no longer can climb. Eventually, it starts to descend at full power, strikes an object on the surface, and crashes. 

My question is: How is this possible? Seems to me that all precipitation, when below freezing, should be frozen all the way as long as the air temperature remains below freezing. The aircraft's outer shell should also be below freezing. Therefore, no rime icing on the aircraft surface.

There's quite a bit of problems with FS2020 icing simulation (why should that be any different from the rest of the sim). Anyway...not sure about what model you were flying, but here's the real-pilot's take on FS2020 icing control on the A320:

Flying a Mooney prop. It does not have wing boots for icing conditions.
