I'm noticing that on a handful of my flights I'm landing with only 360lbs total cargo, this has something to do with my sim recalculating to empty payload. Maybe if sim crashed or something. Not sure yet how it's happening. Just a heads up it's not intentional. I will keep an eye on it and try to find out where I'm resetting the payload sometimes.

Hello James,
This is the first I've heard of that. There was a bug a while back that kept resetting the passenger count back to 1, and that was fixed in SPAACARS version 9.2. But if that was happening with PAX count it's possible I missed a similar issue with payload. Do watch and see if you can find out what might be triggering it and I'll watch it also. This would be related to the SPAACARS program and not the Econ Module I'm fairly certain.
I have released a newer version of SPAACARS today (Version 9.5.1) that has been tested now for some time by a few SPA pilots. This basically does further improvement to stop false payload/fuel change messages that were still popping up.
Fortunately, such payload adjustments should not affect your Econ revenue under the current cost/revenue model so there should not be a penalty for that (but it would be nice to identify and fix if it's a bug). This cost/revenue model, while not so realistic, allows all pilots to fly their choice of aircraft without affecting the Econ revenue - other than that it's likely easier to fly a smaller plane than a larger one. But then, it's also easier to fly a default fsx 747 than an A2A P-51, so there's only so much standardization that can take place given the wide variety of simulators, aircraft, and settings available to pilots.
Let me know if you find something out, and perhaps I'll do some investigating on my own also. (I'm guessing you're at least using the version 9.5 SPAACARS).
